Members of the Octave Premium range spend time maturing in ex-sherry ‘octave’ casks, one-eighth the size of an ordinary butt. In the case of this Caperdonich, the process produces waxy, oaky notes, with red apple and spice mingling, and spiced oak flavours leading the finish.
